It fits before the rollers to help you to feed the pasta into the machine, it's difficult to explain but the folded part fits onto the body of the machine before the rollers, so the adjustment dial should be to your left, slide the tray into position and click it back towards yourself, it works great:-)
I don't have the tray (it isn't included with every retail package), but I believe it fits where the second roller attachment would slot. Tried that? ;-)
but where does it go? i'm a regular user of my machine, and after 18months of use I still can't figure out where it sits (this may be more my mind than the machine itself of course)
Hi. This is sometimes supplied, depending on which retailer package you buy. This is a pasta tray - the idea being the pasta dough sits on that tray, instead of you having to hold the dough above the rollers with your spare (non-winding) hand. A little over the top in my opinion. Try also searching out the 'stainless steel tray is for what' thread on my site (Pasta Recipes Made Easy). Hope that helps!
There is very little in it. Both are high quality, super sturdy machines. I always used and loved the Imperia, but I currently have an Atlas on test from the manufacturer and I cannot decide between them. You can't go wrong with either!
Make sure the water is boiling furiously and put a tablespoon of olive oil in with the water. This will float on the top and should help the pasta from sticking together :)
I make the pasta with eggs and flour, no water...I so not put EVOO in the water (just salt). I will give it a try and keep you posted....Thanks for responding back...
Hi Gina. It may be one of a few things. Maybe the dough is too moist - how are you making it - just flour and eggs? (I want to check you're not putting water in it too, which could affect things and isn't required.) Otherwise, make sure your pan is large and you're using LOTS of water. For long pasta I also add drop of EVOO and stir constantly as it cooks (w/a spaghetti spoon). As for sauce, just mix it through - don't cook the pasta further, that could maybe get it clumping. Help?
Hello, Yes...I cooked the pasta for about a minute and the sauce was prepared before hand. I drained the pasta and placed it into the sauce in a boil and it seemed to stick together and not separate. Do you think I under cooked?

How do you keep the pasta from sticking together after cooking? I made some pasta and it clumped together, but it taste great. I boiled and did not let it dry, but the end result waspasta stuck together. Any advice/
Hi there. You could definitely make dough with different, more chinese flour, but the two cutting options you get with this standard model are set. Maybe an additional angel hair (capelli d'angelo) attachment would be better for superfine noodles.
If you've made pasta using eggs (with normal or v. fine type zero flour), I don't worry about drying as the end product isn't very wet. If just using water and semolina, I find it can be helpful, but not essential.
How did you fix it to the table? With a clamp?

I tend to put a bit of folded kitchen paper under the bottom of the clamp to stop the underside of the work surface being dented.
